Quorn and Veg Country Pie
Fantastic pie featured at All In. Suitable for vegetarians
Slice the onions and put into a pan with a bit of oil on a low heat until nice and soft. Then and the garlic, cook for another couple of mins.
Add the carrot and swede, put a lid on it, cook for another 2 mins. Add 3 good tablespoons of butter.
Add milk to the dissolved stock cubes to make 1.5 litres
Once butter is melted add 3 tablespoons of flour and mix in.
Once the flour has been mixed in add 1.5 litres of veg stock and milk mixture small amount at a time.
Once all the liquid has been added, add in the peas and sweetcorn then the Quorn pieces.
Bring pan back up to heat, season to taste.
Put mixture into a roasting tin, put rolled pastry on top, brush with egg wash
Baked at 200 C for 30mins approx.
