Quorn and Veg Country Pie
Fantastic pie featured at All In. Suitable for vegetarians

  1. Slice the onions and put into a pan with a bit of oil on a low heat until nice and soft. Then and the garlic, cook for another couple of mins.
  2. Add the carrot and swede, put a lid on it, cook for another 2 mins. Add 3 good tablespoons of butter.
  3. Add milk to the dissolved stock cubes to make 1.5 litres
  4. Once butter is melted add 3 tablespoons of flour and mix in.
  5. Once the flour has been mixed in add 1.5 litres of veg stock and milk mixture small amount at a time.
  6. Once all the liquid has been added, add in the peas and sweetcorn then the Quorn pieces.
  7. Bring pan back up to heat, season to taste.
  8. Put mixture into a roasting tin, put rolled pastry on top, brush with egg wash
  9. Baked at 200 C for 30mins approx.
